When will you disengage autopilot? Situation - Chicago Crosswind Gusts

Here is a situation (03 Approach 008 - Chicago - Crosswind gusts.situ - Which comes with the AEROWINX purchase) I was using to practice landing after disengaging AUTOPILOT and A/T.

Understandable, the random weather it would generate when you run on your computer would be different. But in this situation at what height would you disengage AUTOPILOT and AUTOTHROTTLEs and land manually? Lets say there is crosswind of 20-25 Knots from RIGHT (north in this case).
747 is not an airplane, it is a symbol of inspiration....

It is up to you, but in my opinion 1000 ft would be nice to disengage AP and AT (with the runway in sight)
It allows you enough time to fly manually (at least one minute).

I don't fly the 747, but according  to the 787 Fcom:
Consider disengaging A/P and disconnecting A/T (if desired): 
- 1 to 2 nm before the threshold,   
- or approximately 300 to 600 ft above field elevation.

I think it is a bit late, especially in case of strong crosswind.

You can disengage a lot earlier than 1000 ft, but it is useless to struggle against gust for the whole approach (workload), and in case of windshear or QFU change because of the wind (like in Narita Airport), it is easier to go around with AP and AT engaged, especially after a long haul flight....

(looks dumb) QFU = magnetic heading, but I don't see how they can change that, not even due to wind... ??!?  Is this jargon for a runway change (and associated vectored circling-like detour)?

Yes the QFU doesn't change, I mean it is a runway change.

E.g you are on approach for the QFU 34R, and the preceding aircraft just encountered strong tailwind on short final, Atc may request you to cancel your approach to proceed for the Qfu 16L
