Stupid question: but is there a way to manually change the VNAV mode from DES back to CRZ?

On the CRZ page, enter a CRZ ALT that is at least 100 feet below the current aircraft altitude.

Press EXEC.

If required, re-enter your correct target CRZ ALT and press EXEC again.

In other words, when you modify your CRZ ALT during descent and the aircraft is above that CRZ ALT, the CRZ mode will re-activate.
