The elevator feel pressure change is slow. You can watch it on the Analysis page (resolution 5 psi).

The elevator feel pressure is a centering force; so if you release your hand, it should center the stick.

On the 744; is the hydraulic feel unit also responsible for stick shaking?

No. The stick shaker is a motor mounted on the control column; it rotates an unbalanced piece of mass which shakes, rattles and rolls.
