What is to recommended way to perform a step-climb?

What is to recommended way to perform a step-climb? I've been told two ways: either press the alt nob and go  Thrust Ref and VNAV SPD, or use V/S to have a gentle ascent.

FWIW for 2000 feet THR REF isn't the way to go... FLCH is optimized for small climbs- "comfort mode" and SPD VS at 3-400fpm is another option.  The lack of speed protection ought not to be a factor whatsoever at those rates and duration.

A VNAV cruise climb is probably another choice.
