Can you create/add a waypoint to the FMC database like in PS1? I guess not, right?

The PSX-FMC just allows entries that the real FMC allows. PS1 specific features are not available anymore.

However, remember that route files allow you to create waypoints anywhere as part of a route. You can fly old routes with disappeared waypoints as long as they are not specified as airways.
